SUBZ PULAO

SUBZ PULAO

Ingredients 1 cup basmati rice, 2 cups water, 3 tbsp oil/ghee, 1 tbsp garlic-ginger paste, 1½ cup tomato puree, ½ tbsp garam masala, ½ tbsp red chili powder, ½ tbsp cumin seed (jeera), salt, pepper (to taste).


Vegetables 2 onions, 1 potato (chopped), 1 carrot (chopped), ½ cup cauliflower (chopped), ½ cup green peas, ½ cup beans, ½ tbsp dried mint leaves, ½ tbsp fenugreek leaves (kesoori methi), 1 tbsp lemon juice. 


Method In a deep microwave-safe bowl, add oil and dry masalas, all chopped vegetables, and 1/4 cup of water, and microwave covered for 3 to 4 min. at 100% power. Now add the rest of the ingredients and water, mix well and microwave covered for 10 min. at 100% power, and then at 50% for 6 min. Standing time of 2 min. to be given. Serve hot.


PUNJABI CHICKEN CURRY

PUNJABI CHICKEN CURRY


Ingredients 800 gram chicken (cut into pieces), 1 cup card, 1 cup onion paste, 1 cup tomato puree, 2 tbsp ginger-garlic paste, 3 tbsp ghee, 1 tbsp garam masala, 1 tbsp coriander powder, 1 tbsp red chili powder. 


Method Mix chicken pieces with the card, ginger garlic paste, red chili powder, and salt and keep them aside for ½ hour in the refrigerator. Take a microwave-safe bowl and add ghee and onion paste, tomato pieces, and other dry masalas and microwave covered for 6 to 8 min. stirring in between. Add marinated chicken and ½ cup water and mix it thoroughly. Cover it and microwave at 100% power for 8 to 10 min. Stirring in between. Cover and microwave at 60% power for 2 to 3 min. Serve hot with naan or roti.

HARA MURG ANGAAR

HARA MURG ANGAAR

Ingredients 5 chicken breast pieces,
½ kg card (beaten), 2 tbsp lemon juice, 1 tbsp garam masala, salt pepper (to taste), 1 tbsp chaat masala, 2 tbsp oil,

To make a puree Grind together 100 gm coriander leaves, 100 gm mint (pudina) leaves, 10 to 12 garlic cloves, 4 to 5 green chilies, 1 small piece of ginger. 


For the marinade Make diagonal cuts on the chicken breast. Mix beaten curd, masala paste, and all the masalas together, mix well, and put the chicken pieces into it, and keep for ½ hour. 


Method Set the microwave on combination 2, apply oil on chicken pieces, and grill on the rack for above 10 to 15 min. Keep on turning the pieces for even browning. Serve hot with a crisp salad, lemon wedges, and chutney.


DUM ALOO

DUM ALOO

Ingredients:
200 gm small potatoes, 2 tbsp oil, 2 tbsp tomato puree, 2 tbsp onion paste, 1 tbsp chili-garlic paste, ½ tbsp turmeric powder, salt, pepper (to taste), green coriander (to garnish). 

Method Wash and peel the potatoes. Microwave the potatoes for 8 min. at 100% power. Keep aside. Prick with a fork. In a microwave-safe bowl, put oil, all masalas, and paste. Microwave covered for 5 to 7 min. at 100% power. Stir in between. Add potatoes and microwave for 2 min. at 100% power. Stir in between. Finally grill for 5 to 7 min. till golden brown. Garnish with green coriander.


PANEER IN BUTTER SAUCE

PANEER IN BUTTER SAUCE
Ingredients 250 gram paneer (cut into cubes).

For butter sauce 2 tbsp butter (Yellow or white), 1 tbsp garlic-chili paste, 1 onion (chopped), 2 tbsp Maida, 1 cup milk, 2 tbsp curry paste powder, 1/4 tbsp garam masala, 1 cup fresh cream, salt, pepper, red chili powder (to test). 

 

Method  In a microwave-safe bowl, add butter garlic paste, and chopped onion and microwave at 100% power for 2 to 3 minutes. Add the rest of the ingredients (except paneer and cream) slowly, mixing well to avoid any lumps. Microwave at 100% power for 5 to 6 min. or till the sauce thickens. Now add paneer pieces and cream, mix it, and microwave covered for 2 min. at 100% power. Serve hot with naan and Parantha.

SPINACH WITH CHEESE & CORN

SPINACH WITH CHEESE & CORN
Ingredients500 grams spinach (approx 4 cups chopped spinach), 1 tin American corn kernels (drained), 2 tbsp butter, 1½ cup milk, 2 tbsp flour (maida), 3 tbsp Mozzarella cheese, salt, pepper (to taste).

Method In a microwave-safe dish, put chopped spinach and corn and microwave covered for 4 to 5 min. at 100% power. In a bowl, mix milk and maida together, avoiding any lumps, and keep aside. In another microwave-safe dish, add butter and microwave it at 100% for 30 seconds. Add steamed spinach and corn, milk and maida sauce, and all other ingredients and mix well and microwave covered at 100% for 4 to 5 min. Stir in between. Serve hot with the main mail or as a snack.

CHOCOLATE COOKIES

CHOCOLATE COOKIES
Ingredients 1 cup flour, 3/4 cup butter, 50 ml condensed milk, 75 gm castor sugar, 100 gm chocolate (broken into tiny pieces).

Method Cream together butter and sugar till light and fluffy. add condensed milk and mix it. Add flour and chocolate pieces and form together into a soft dough. Meanwhile, preheat the microwave at Convection Mode to 180o C. Roll the dough into fancy shapes with a biscuit cutter and place on a baking tray, and bake at 180o C for 10-15 min. Allowed the cookies to cool and dust icing sugar or cocoa powder on top. Serve with tea/ coffee.

ALMOND DROPS

ALMOND DROPS
Ingredients 100 gram ground almond, ½ Cup maida, 1 tbsp butter, 100gm castor sugar, few drops of almond essence, 2 egg whites (beaten until stiff), flaked almond or glace cherries (to decorate).

Method Mix ground almonds, butter, caster sugar, and almond essence into egg whites and prepare a mixture. Preheat the oven to 150o C at convection. Place this mixture in a piping bag with a nozzle and pipe the mixture into a circle, S-shapes, and stars. Put a flaked almond for glace cherry on top of each drop. Bake in a preheated oven for 20-25 min. Cool on a wire tray.

CHERRY & ALMOND CAKE 

Cherry & Almond Cake
Ingredients 200 gm flour (maida) and 1 tbsp extra, 200 gm soft butter and extra for greasing, 4 eggs (beaten), 1 tbsp baking powder, 180 gm caster sugar, 2 tbsp orange juice, 1½ tbsp almond essence, 1 cup glace cherries (halved).

For decoration 100gm icing sugar (sifted), 3 tbsp flaked almonds, 10-12 fresh cherries. 


Method Preheat the oven to 180oC at convection. Grease a cake dish with butter and keep it aside. Beat the butter and sugar together until fluffy and light. Stir flour and baking powder together and beat the eggs. Now add beaten egg and flour to the sugar-butter the mixture, also adding the orange juice. Mix evenly till thick and creamy. Toss the glace cherries in the extra 1 tbsp flour and fold into the butter. Add almond essence. Spoon into the prepared cake dish and bake at 180oC for 40 min. When ready, leave to cool for 10 min. and then remove on onto a cooling rack.


For Decoration Mix the icing sugar with one tbsp of water. Spread the flaked almonds and decorate with the fresh cherries over the top of the cake. Sprinkle the icing sugar over the cake to decorate.


BESAN LADOO

Besan Ladoo
Ingredients 1cup flour (besan), 1/4cup suji, 1cup castor sugar, ½ cup ghee, ½ tbsp cardamom powder.

Method In a microwave-safe bowl, add ghee and microwave at 100% power for 1 minute. Add gram flour and microwave at 100% power for 4-5 min., stirring every 1 min. Now at 60% power microwave for 2 min. Stirring in between. When it is cool, add castor sugar and cardamom powder. Mixed well. Now roll in the shape of ladoos with your hands and store in air-tight containers.


OAT CHURCHES

Oat Crunches
Ingredients 100 gm rolled oats, 50 gm oatmeal, 50 gm corn flakes, 150 gm brown sugar, 100ml butter/oil/ghee, 1 egg (optional), 1½ tbsp essence (almond or vanilla).

Method Mix all the ingredients (except egg and essence) in a bowl and leave to stand for ½ hr. Now mix egg and essence and beat together with all the other ingredients thoroughly. Preheat the oven to 160oC. Place blobs of this mixture, a teaspoonful at a time, on a greased baking tray and press each flat with a damp fork. Bake for 50-20 min. in a preheated oven until golden brown. Leave to cool for 2 min. and then transfer to a wire rack to cool completely. Store in air-tight containers.

DHOKLA

Dhokla

Ingredients Gram flour (besan), 1/4 cup sour curd, ½ cup water, ½ tbsp meetha soda, a pinch of sugar, 1 tsp Eno fruit salt, ½ tsp turmeric powder, a pinch of salt.

 

For tempering 1 tbsp oil, 5-6 green chilies, 8-10 curry leaves, 1 tsp mustard seeds.

 

Method

For dhokla Mix all ingredients together to make a batter. Pour this batter into a microwave-safe bowl or plate and microwave covered at 70% or 80% power for 6-7 min. When it is ready to pour 1/4 cup water over it and cover it.

 


For tempering In a microwave-safe bowl, add all ingredients and microwave for 2-3 min at 100% power. Pour this tempering over the prepared dhokla and cut it into pieces. Sprinkle chopped coriander and serve with chutney/sauce.
